Understanding the Washed Coffee Process and Why It Matters

One of the key stages that determines the quality and flavour of the coffee in your cup is how the coffee cherry is processed after harvest. Among all processing methods, the washed (or wet) process is often considered the best for producing clean, bright, and high-quality Arabica coffees.

The Steps of the Washed Coffee Process

1. Harvesting and Sorting

Ripe, red coffee cherries are hand-harvested at peak maturity. They are then sorted to remove underripe or damaged cherries, often using water channels — where good cherries sink and defective ones float. This careful selection is the foundation of high-quality washed Arabica coffee.


2. De-pulping

The sorted cherries are passed through a de-pulper to remove the outer skin and pulp. What remains is the coffee bean covered in a sticky layer of mucilage inside a thin parchment shell.


3. Fermentation

The beans are then placed in clean water tanks for several hours to a couple of days. During fermentation, naturally occurring microbes break down the mucilage, softening it for removal. This stage must be closely monitored, as it directly affects the flavour clarity and acidity of the final coffee.


4. Washing

After fermentation, the beans are thoroughly washed to remove all remaining mucilage and residues. This step gives the process its name — washed coffee — and ensures a clean, crisp flavour profile.


5. Drying

The freshly washed beans are dried either on raised beds or patios under the sun, or sometimes in mechanical dryers. They are carefully dried to a stable moisture content of 10–12%, ensuring longevity and consistency during storage and shipping.


6. Milling and Sorting

Finally, the dried parchment layer is removed in a dry mill. The beans are then graded, sorted by size and density, and prepared for export to roasteries and coffee lovers worldwide.
